Cornbread is one of those things everyone loves. Remembering growing up eating with some type of gravy or eating as my bread than eating a dinner roll.Today I decided to make it more different than an average cornbread.So I decided to share you my loves plantain cornbread.
1 Box Cornbread mix (I prefer Jiffy)
2 eggs
2 Mashed yellow plantains
1/3 cup milk
1/4 cups green onions
1/2 cups shallots
½ jalapeno
1 teaspoon salt
1/2 teaspoon Goya seasoning
1/2 teaspoon paprika
* Preheat oven 400*
* Cut up your plantain than when you have them done in a medium pot with water.Boiled them for 10 mins.
* In a small bowl mash plantain with a fork. Then add your egg and your milk, greek yogurt mix it together.
* In the large bowl adds your cornbread mix. Then get a cutting board cut up your onions and the jalapeno
* In a medium pan sautes the onions and jalapeno with a tab bit oil to the saute pan. Let it cook for five mins.
* Incorporate your plantain mixture into the dry ingredients and put it in the bowl
*Mix it together; it shouldn't be lumpy.
* Add your batter to the muffin tin then put it in the oven.
* Bake 25 mins or until it's browned on top.
